Allpurpose flour: 300g

Pumpkin puree: 121g

Egg: 1 piece

Green Dough:

Allpurpose flour: 280g

Green tea powder: 20g

Egg: 1 piece

Other Ingredients:

Water: 112g

Black sesame seeds: a small amount

Preparation Steps

Step 1

Begin by steaming the pumpkin until it is tender. Once cooked, blend it in a food processor until it forms a smooth puree. Add the flour and egg to the pumpkin puree, and knead until you have a cohesive yellow dough. Repeat this process with the allpurpose flour, green tea powder, and egg to create the green dough. Once both doughs are smooth, cover them with a damp cloth and let them rest for 20 minutes. After resting, knead in a small amount of black sesame seeds for 1 to 2 minutes, then let them rest for an additional 8 minutes.

Step 2

Divide each of the colored doughs into four equal parts, covering the remaining dough with plastic wrap to prevent drying. Take one portion and gently press it flat. Then, cut the flattened dough into strips of similar thickness. Roll each strip into the desired thickness and shape, forming a smooth, round rope.

Step 3

Twist two ropes of dough together to create a braid, being careful not to loosen your grip. After twisting, give the braid a firm twist a couple of times and let it bounce on the countertop to set its shape. The dough will become thinner and longer during the twisting process. If needed, you can cut the braid into smaller sections.

Step 4

Preheat the oven to 180 degrees Celsius and bake the braids on the lower rack for 15 minutes. Reduce the temperature to 160 degrees Celsius and bake for an additional 5 minutes until lightly golden. Allow the braids to cool before testing for doneness. If the strips were too thick and did not bake through, you can return them to the oven at 100 to 120 degrees Celsius for an extra 5 minutes to finish cooking.
